Poffertjes - The Sweet Dutch Pancakes

Welcome, everyone! This time i'll be showing you how to make poffertjes. Of course some of you have already known this dessert, haven't you? Poffertjes are a traditional Dutch batter treat. Resembling small, fluffy pancakes, they are made with yeast and buckwheat flour. Unlike American pancakes, they have a light, spongy texture. For this recipe, I invent it myself. Check it out!



FLUFFY POFFERTJES

(Poffertjes, coated with sugar powder)



INGREDIENTS
  • 200 gr All Purpose Flour
  • 100 gr sugar powder (depends on the sweetness you want)
  • 1 tsp salt
  • 5 tbsp milk powder
  • 1 tsp vanilla extract
  • 1 tbsp baking powder (you can use baking soda instead of baking powder)
  • 1 tsp yeast (optional, use it if you like the yeast taste)
  • 2 egg yolks
  • 2 egg whites
  • 1 tbsp sugar powder (for the egg whites)
  • 2 tbsp cooking oil
  • 2 tbsp melted margarine
  • Warm water


PROCEDURES

  1. In a bowl, put flour, milk powder, vanilla extract, baking powder, yeast, and salt. Mix these dry ingredients.
  2. Add in warm water little by little, until the batter is not too thick. Add in egg yolks, cooking oil, and melted margarine. Stir them with fork, do not over stir them.
  3. In a separated bowl, beat the egg whites until soft peak. Add in sugar powder. Continue beat it until hard peak.
  4. Add the hard peak egg whites into the flour batter little by little. Stir it carefully with spatula.
  5. Wait for the batter approximately 20 minutes. 
  6. Heat the poffertjes maker. You don't need to coat it with margarine or oil because the batter itself contains oil. 
  7. Pour the batter into the poffertjes maker . Wait for 30 seconds, then flip the half-cooked poffertjes with a toothpick.
  8. Serve the poffertjes with sugar powder.
